  • Our trout « gravlax » is cured at the Beau Mont restaurant with juniper berries and balsam fir

    The trouts come from the Kenauk Nature fish farm in Montebello (Outaouais)

    Kenauk is one of the largest private nature reserves in North America and the fish farm meets strict environmental standards, while producing rainbow, brown and speckled trout

    We also use trout eggs as a garnish for many of our prepared meals!
